Registered dietitian and plant-based cooking teacher with a passion for helping people to optimise both their health and happiness though good food. Currently specialising as a paediatric dietitian working in the NHS but slightly unconventionally, wherever possible/appropriate trying to get patients and their parents to realise the wonders and nutritional benefits of wild edibles! Sarah Watson - Wild Food and Cocktail Specialist at Wild Feast and Difford's Guide
Sarah has been teaching foraging for nearly 10 years and is the author of the ‘Bartenders guide to foraging’ articles for global drinks website Difford’s Guide. She’s a wild food and cocktail specialist who loves to introduce people to exciting, new, foraged flavours, and she run foraging and wild cocktail courses in the South East.

Leanne Townsend is a wild food specialist in the North East of Scotland. She writes about wild food and runs workshops and courses, teaching people about nature’s larder throughout the seasons. Leanne’s specialist areas include creating recipes for wild food dishes and preserves, as well as foraged cocktails and infusions such as liqueurs with wild ingredients. Leanne also carries out academic research on wild food cultures in the UK.

Sam Webster - Foraging Teacher and Wild Food Specialist at Totally Wild UK
Sam has been foraging for as long as she can remember. “I used to walk the fields of my Nana’s farm as a child collecting blackberries, damsons, and the occasional field mushroom, but I got really excited about foraging when I was in my 20s and I was bought a foraging course for my birthday, I’ve not turned off my inner forager since! I now work for Totally Wild UK doing my hobby as a job, I love teaching people about wild food and seeing the amazement on their faces the first time they try a nettle and discover it tastes AMAZING!”

Shane Waltener is an artist, a lecturer in design at the University of the Arts London, an associate artist with Entelechy Arts and resident artist at Stave Hill Ecological Park in Rotherhithe. He has co-author of Practical Basketry Techniques, a project book published by A&C Black.
